Vitality Sea Moss was founded and created by Nutritionist & Chef, Gail Gamble Mitchell, in July of 2020.
Gail holds a Bachelor degree in Culinary Nutrition from Johnson and Wales University. Gail perfected her craft under the tutelage of famous chef, Walter Staib, owner of the historic City Tavern in Philadelphia. She further her training at Sandals Royal Caribbean Resort, White House, Jamaica. Gail also worked as a chef at the Viking Range store in Bryn Mawr, PA, teaching advanced cooking skills to adults and children. Along the way, she discovered her love for creating dishes that were delicious, as well as nutritious. In 2005, Gail joined the Dining Services team at Villanova University where she started her career as an Assistant Chef and within a year was promoted to Nutritionist Chef.
Gail's "National Nutrition Month" program took first place in NACUFS 'in 2007. It was the most Innovative Nutrition Program in 2007. In 2008, Gail was involved and committed in helping Villanova Dining Services eliminate partially hydrogenated oils and MSG from all products purchased and served on campus. She is very knowledgeable in the areas of food allergies and food intolerances. In the fall of 2015, Gail assisted in the launch of VEG, Villanova Eats Great, the dining service newly designed Nutrition Program. She has been sharing the education of nutrition across campus about the benefits of a plant forward diet.
